Basic Tree Nut Cheese
2 Cups Raw tree nuts (cashews, macadamias, almonds, etc.) soaked for 8 hours
1 Cup Filtered water
1 Tsp Probiotics
Blend all ingredients in a high-speed blender until smooth. Place the mixture in a nut milk bag or a strainer that has been lined with cheesecloth. Gently squeze out most of the liquid (safe it to add to your smoothy or your next batch of cheese, it’s full of pro-biotics). Then twist-up the bag or cheese cloth, form a ball, put on strainer over a bowl and place a weight on top. The weight should not be so heavy that it pushes the cheese through the cloth, but heavy enough to gently start to press the liquid out. Cover with a dishcloth and leave in a warm place to culture for at least 24 but no longer than 48 hours.
Once culturing is complete stir or process in the following ingredients:
1 Tsp Onion powder
1 Tsp Garlic powder
3/4 Tsp Salt
2 Tsp Nutritional yeast (nutritional yeast is not raw and therefore optional)
Add whatever herbs or spices you desire to customize this cheese to your taste and transfer the cheese to a ring mould. Remove the ring mould and place in the refrigerator or remove the ring mould and place in a dehydrator at 105 degrees for 24 hours to get a rind.
