Raw Vegan Coconut Yogurt
Made with Young Coconut Meat
2 Cups Flesh of 2 young Thai coconuts
3/4 Cup Almond milk or coconut water
Pinch sea salt
1 Tbsp Coconut nectar (or to taste)
2 Tsp Freshly squeezed lemon juice
Place all ingredients in a high speed blender or food processor and blend untill totally smooth and creamy. Enjoy with fresh berries or fruit of choice.
Makes 2 servings.
