1 Nori sheet
1/2 Cup Parsnip rice, click here for recipe
1/2 Carrot, sliced length wise
1/2 Red bell pepper, sliced length wise
1/4 Avocado, sliced
3 Green onion strips
1 Tsp Wasabi paste (optional)
Lay the Nori sheet (rough side up) on a bamboo sushi mat. Moisten the nori sheet slightly to make it more flexible. Spread a thin layer of wasabi (optional) then cover with 1/4″ thick layer of parsnip rice and pat it down firm with your hand. Then load the strips of carrot, pepper,avocado and green onion and start rolling away from you (for rolling instructions go to: Rolling sushi).
