Raw Vegan Nacho Cheese


1 Cup Raw cashews

1/2 Yellow bell pepper

1/4 Cup Water, plus more if you want it a little thinner

1/2 Tsp Olive oil

1 1/2 Tbsp Lemon juice

1/4 Cup Shallot or Onion – chopped

1/2 Tsp Smoked paprika (or more)

1/2 Tsp Turmeric (or more)

1/2 Tbsp Salt

1/2 Tsp Cayenne pepper, optional


Put dry cashews in a high powered blender or food processor and chop until they’re a fine powder. Add all other ingredients, and blend until smooth. Adjust seasonings and thin with additional water as desired.

Makes 1 1/2-2 cups, depending on consistency
