Raw Zucchini Pasta ai Funghi Porcini


2 Large Zucchini

8 Porcini Mushrooms (if you can’t find  them, use other mushrooms. It will not have the distinct Porcini taste but it will do)

10 dates

2 Tomatoes

1 Orange (juiced)

10 Sundried tomatoes, chopped

1/4 Tsp Chilli Powder

1/4 Tsp Curry Powder

1 Small Shallot Onion

1 Tsp Oregano, dried

1 Tsp Himalayan rock salt


Slice the mushrooms and lay them out in a bowl. Add all the other ingredients (except zucchini, dried oregano and salt) in a food processor and blend into a paste, adding a little water to achieve desired consistency. Pour the sauce over the mushrooms and mix in well. Place into the fridge to marinate for 30 minutes.

Using a mandoline or spiralizer, make the zucchini into noodles and add to a bowl. Toss the oregano and salt with the noodles. Plate the noodles and add the marinaded mushrooms and sauce on top.
