Rawsagna

Ingredients:

1 Medium Zucchini – cut lengthwise

1 Cup Spinach – torn

Tomato sauce – click for recipe

Pesto sauce – click for recipe

Nut cheese – click for recipe

Walnut meat – click for recipe

Directions:

Put two zucchini strips on the serving plate, overlapping them slightly. On top of this, put down a layer of the walnut meat and a layer of spinach. Top this with two more strips of zucchini, add the cheese, the tomato sauce and another layer of spinach. Add two more zucchini strips with the pesto on top. Finish this with another layer of slightly overlapping zucchini strips toped with tomato sauce and a sprinkling of ground almonds.

Makes one serving.
